Here is a quick and easy recipe from our Renal Care 360° dietitian for hummus. Chickpeas are a tasty source of plant-based protein, and when you blend them up with a couple of other ingredients you have the tastiest dip for veggies or pita. You can even use it as a spread on sandwiches or toast. This hummus is great for parties and for hosting guests as well.
This recipe has no added salt, so the flavor comes from garlic, cumin, and smoked paprika. Feel free to add as much or as little as you like.
Recipe: CKD-friendly Hummus
Ingredients (makes 8 servings):
1 can of chickpeas (garbanzo beans), drained and rinsed
1/4 cup tahini (sesame seed paste)
1/4 cup water
3 Tbsp lemon juice
1 Tbsp minced garlic
1/4 tsp ground cumin
1/4 tsp smoked paprika
Olive oil and more smoked paprika for garnish
Directions:
Add all ingredients to a small food processor or blender and blend until smooth.
Top with a drizzle of olive oil and a sprinkle of smoked paprika.
Store in an airtight container in the fridge for up to 4 days.
