Recipe: Crispy Chickpeas are the perfect snack for The Big Game

Packed with plant-based protein and fiber, these crispy chickpeas are a great kidney-friendly snack for the big game! They can also be used as a salad topping to give your greens some crunch and texture.

Crispy Chickpeas (makes 4 servings)

Ingredients:

1 can low sodium or no salt added chickpeas

1/2 tsp black pepper

1/2 tsp onion powder

1 tsp smoked paprika

1 tbsp olive oil

Directions:

Preheat oven to 425°F.

Drain and rinse the can of chickpeas. Dry them very thoroughly with a clean dish towel. Pick out and discard the loose chickpea skins.

Add the chickpeas, spices, and olive oil to a sheet pan. Toss to coat the chickpeas evenly.

Bake at 425°F  for 35-40 minutes or until chickpeas are crispy. Check the pan and stir the chickpeas about every 15 minutes to avoid burning them. These are best eaten the same day, but if you have any leftovers, store at room temperature for another day or so.
