Creamy Vegan Pesto (Makes about 1/2 cup)
1 cup fresh basil leaves
2 Tbsp cashews
2 Tbsp nutritional yeast
1 Tbsp lemon juice
2 Tbsp olive oil
1 Tbsp water
1 Tbsp minced garlic
Add all ingredients to a small food processor or blender and blend until smooth. Store in an airtight container in the fridge for up to 4 days.
