Elevating Comfort Food Recipe: Mashed Cauliflower

This alternative to mashed potatoes is low in potassium, phosphorus, and sodium. It is a great way to get more vegetables into your diet:

Mashed Cauliflower Recipe (Makes 4 Servings)

Ingredients:

1 large head of cauliflower, cut into pieces
2 tablespoons sour cream
1/2 cup shredded or grated parmesan cheese
4 cloves garlic
1 tablespoon unsalted butter, melted
1/4 teaspoon ground pepper
Chives to garnish

Directions:

Boil or steam cauliflower until tender. Drain.

Place cauliflower florets into a food processor blender along with sour cream and parmesan cheese. Add garlic, melted butter, and ground pepper. Process until smooth.

Garnish with chives, if desired. Enjoy!
