For the first recipe in our Savory Seasonings for Kidney Health series, we are featuring Roasted Carrots with Dill. These make a great vegetable side dish to add to your menu when hosting guests. Carrots pack a punch of nutritional benefits that make it a superstar in the world of healthy eating and when paired with dill create a delicious flavor. This series is all about highlighting seasonings that can be used as an alternative to salt for healthier cooking.
1 pound whole carrots, peeled
1 tbsp olive oil
1-2 tbsp fresh dill or 1/2 tbsp dried dill
1 tbsp fresh parsley or 1 tsp dried parsley
Black pepper to taste
Directions:
Preheat oven to 400°F.
Place peeled carrots on a baking sheet lined with aluminum foil or parchment paper. Drizzle with olive oil.
Add herbs, reserving some for garnish. Mix together until carrots are well combined.
Bake at 400°F for 20 minutes. Remove carrots from oven and turn the carrots. Place back in oven for additional 15-20 minutes or until desired level of doneness is reached.
Place carrots in serving dish and top with dill and parsley to garnish. Serve and enjoy!
